The “arroz con costra” is one of the most typical dishes in the traditional gastronomy of Elche. That is wellknown by the great majority of citizens and visitors, but not the fact that this dish has its origin in the Middle Ages.
The first known recipe of a rice in Spain is “Arroz en Caçuela al Horno” founded in the book of recipes: “Libro de Cozina, Guisados y Manjares” edited in 1525 by Ruperto de Nola, cook of the King of Naples.
In Elche, the Association “Amigos del arroz con costra” meets every Wednesday of the year (except summer months) and cooks this dish using the traditional tools.
Usually, different people of the cultural, political, and social life of the provincial and even national panorama, were invited to taste this dish. This time, the Association has prepared a tasting for authorities such as the Culture’s Council, José Manuel Sánchez, or the Director of the Festival, César Oliva.
